Clean the Octopus
Rinse the baby octopus under cold water and remove any remaining beak or innards. Pat dry with paper towels.

Chop Vegetables
Slice the red and green bell peppers into thin strips. Mince the garlic and ginger. Chop the green onions into small pieces, separating the white and green parts.
Cooking

Heat the Oil
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

Stir Fry Octopus
Add the cleaned baby octopus to the pan and stir-fry for about 3-4 minutes, or until they turn opaque and start to curl slightly.

Add Vegetables
Add the sliced bell peppers, minced garlic, minced ginger, and the white parts of the green onions to the pan. Stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.

Prepare the Sauce
In a small bowl, mix together soy sauce, chili paste, sesame oil, rice vinegar, honey, salt, and black pepper.

Combine Sauce and Octopus
Pour the sauce over the stir-fried octopus and vegetables. Stir well to coat everything evenly and cook for another minute.

Remove from heat, garnish with the green parts of the chopped green onions, and serve immediately.
