Preparing the Beef and Scallions

Prep the Beef
Thinly slice the beef sirloin or ribeye against the grain into strips approximately 1 inch wide.

Assemble the Rolls
Take a piece of sliced beef and place a scallion at one end. Roll the beef around the scallion tightly. Repeat this process until all beef and scallions are used.
Making the Teriyaki Sauce

Combine Ingredients
In a small saucepan, combine soy sauce, mirin, sake, and sugar. Stir over medium heat until the sugar dissolves.

Thicken the Sauce
In a small bowl, mix the cornstarch and water to form a slurry. Gradually add this to the saucepan while stirring continuously. Cook until the sauce thickens, then remove from heat.
Grilling the Rolls

Plating the Dish
Remove the rolls from the grill and let them rest for a minute. Then, slice each roll into smaller pieces if desired. Arrange them on a serving platter.

Garnish and Serve
Drizzle any remaining teriyaki sauce over the rolls. Sprinkle with toasted sesame seeds and chopped cilantro or parsley before serving.
