Preparation

    Prepare the Pork

    Slice the pork loin into thin strips, about 1/4 inch thick. This will help the pork cook evenly and absorb the marinade well.

    Chop the Vegetables

    Slice the onion, bell pepper, and zucchini into thin strips. Chop the green onions into 1-inch pieces.

Marinade

    Mix the Marinade

    In a large mixing bowl, combine gochujang, soy sauce, sesame oil, minced garlic, grated ginger, sugar, and black pepper. Stir until well blended.

    Marinate the Pork

    Add the sliced pork to the marinade and mix until all pieces are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

Cooking

    Heat the Pan

    Heat a large skillet or grill pan over medium-high heat. Add a small amount of oil to prevent sticking.

    Cook the Pork

    Add the marinated pork to the hot pan. Cook for about 5-7 minutes, stirring frequently, until the pork is cooked through and slightly caramelized.

    Add the Vegetables

    Add the sliced onion, bell pepper, and zucchini to the pan with the pork. Stir-fry for an additional 3-5 minutes until the vegetables are tender yet crisp.

    Finish with Green Onions

    Stir in the chopped green onions and cook for another minute to soften them slightly.

Serving

    Transfer the cooked Jaeyuk Gui to a serving platter. Enjoy it with steamed rice or lettuce wraps.
