Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice in a rice cooker or on the stovetop according to package instructions. Once cooked, let it cool slightly.

Season Sushi Rice
In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds until the sugar dissolves. Gently fold this mixture into the sushi rice using a wooden spatula. Allow the rice to cool to room temperature.

Prepare Shrimp for Sashimi
If using sashimi, ensure shrimp are peeled and deveined. Slice each shrimp in half lengthwise and arrange on a plate. Serve with soy sauce, wasabi, and pickled ginger.

Prepare Shrimp for Sushi
For sushi, lay a sheet of nori on a bamboo sushi mat. Wet your hands with water to prevent sticking and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Place 2 pieces of prepared shrimp in the center of the rice. Roll the sushi tightly using the mat, moistening the edge of the nori with water to seal it.

Slice Sushi Rolls
Using a sharp knife, slice the rolled sushi into 6-8 pieces. Serve immediately with soy sauce, wasabi, and pickled ginger on the side.
