Sweet Potato Tempura

Prepare the Sweet Potatoes
Peel and cut the sweet potatoes into long, thin strips (about 1/4 inch thick).

Make Tempura Batter
In a bowl, mix the tempura batter mix with cold water until well combined. The batter should be somewhat lumpy.

Heat the Oil
In a deep pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Sweet Potatoes
Dip the sweet potato strips into the tempura batter, then carefully place them in the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on a paper towel.
Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed sushi rice with 2 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold it in to season the rice. Let it cool.

Prepare the Nori
Lay a sheet of nori on a bamboo sushi mat, shiny side down.

Add the Sushi Rice
Wet your hands to prevent sticking, then take about 1/2 cup of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

Add the Tempura Sweet Potatoes
Place a few tempura sweet potato strips in a line across the middle of the rice.

Roll the Sushi
Using the bamboo mat, roll the sushi tightly away from you, pressing gently as you go to keep it compact. Seal the edge with a little water.

Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Drizzle with eel sauce and sprinkle sesame seeds on top. Serve with soy sauce.
