Preparing the Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse it under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Assembling the Sushi

    Prepare the Nori

    Place a bamboo sushi mat on a clean surface. Lay a nori sheet shiny side down on the mat.

    Spread the Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Evenly spread it over the nori, leaving about 1 inch at the top edge.

    Add Tuna

    Place a line of diced fresh tuna across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to shape the roll. Seal the edge of the nori with a little water.

    Slice the Sushi

    Using a sharp knife, slice the roll into 4 equal pieces. Wipe the knife with a damp cloth between cuts to keep the edges clean.

Serving

    Prepare the Platter

    Arrange the sushi pieces on a serving platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
