Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water in a fine-mesh strainer until the water runs clear. This removes excess starch.

    Cook the Rice

    In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.

    Season the Rice

    In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve. Once rice is cooked, transfer it to a large bowl and gently mix in the vinegar mixture. Allow to cool to room temperature.

Prepare Spicy Tuna Filling

    Prepare the Tuna

    Chop the sushi-grade tuna into small cubes and place it in a mixing bowl.

    Mix the Spicy Sauce

    Add mayonnaise, Sriracha, chopped green onion, and sesame oil to the tuna. Mix well until all ingredients are combined.

Assemble the Rolls

    Cut the Cucumber

    Julienne the cucumber into thin strips.

    Prepare Nori Sheets

    Lay a sheet of nori on a bamboo sushi mat, shiny side down.

    Spread Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Filling

    Place a line of the spicy tuna mixture and some cucumber strips across the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the nori away from you, applying gentle pressure to form a tight roll. Seal the edge with a bit of water.

    Slice the Rolls

    Use a sharp knife to slice the roll into 6-8 pieces. Clean the knife with a damp cloth between cuts for cleaner slices.

    Garnish

    Sprinkle sesame seeds over the sliced rolls for garnish.
