    Rehydrate the Seaweed

    In a bowl, soak the dried seaweed in cold water for about 10-15 minutes until it expands and softens. Drain and gently squeeze out excess water.

    Prepare the Vegetables

    While the seaweed is rehydrating, thinly slice the cucumber and carrot into matchstick shapes or julienne them for a more refined presentation.

    Make the Dressing

    In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, and salt until the sugar dissolves. Adjust the seasoning to taste.

    Combine the Salad

    In a large mixing bowl, combine the rehydrated seaweed, sliced cucumber, and carrot. Pour the dressing over the salad and toss gently to coat the ingredients evenly.
