    Prepare the Rice

    Rinse the short-grain rice under cold running water until the water runs clear. This helps remove excess starch and will result in a creamier porridge.

    Cook the Rice

    In a large pot, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce the heat to low and cover. Simmer for about 30 minutes, or until the rice is soft and has absorbed most of the water.

    Prepare the Abalone

    If using fresh abalone, clean it thoroughly and slice it into thin pieces. If using canned abalone, drain and slice it as well.

    Combine with Dashi and Seasonings

    Once the rice is cooked, add the dashi stock, soy sauce, mirin, and sesame oil to the pot. Stir to combine and bring the mixture back to a simmer.

    Add the Abalone

    Gently stir in the sliced abalone, cooking for an additional 5-10 minutes until the abalone is warmed through and the porridge reaches a creamy consistency.
