    Make the Dumpling Dough

    In a mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the egg and water. Mix together until a dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Shape the Dumplings

    After resting, roll out the dough to about 1/4 inch thickness. Cut into small squares or circles, about 1 inch in size.

    Prepare the Soup Base

    In a large pot, heat the olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.

    Add Garlic and Spices

    Add minced garlic, salt, black pepper, and thyme to the pot. Stir and cook for an additional 1-2 minutes until fragrant.

    Add Chicken Broth

    Pour in the chicken broth and bring to a simmer. Allow it to cook for about 10 minutes to blend the flavors.

    Cook the Dumplings

    Drop the prepared dumplings into the simmering broth. Cook for about 5-7 minutes or until they float to the surface.
