Preparing the Broth

Make Dashi Stock
In a pot, bring 4 cups of water to a boil and add the dashi powder according to package instructions. Stir well to dissolve.

Season the Broth
Once the dashi stock is ready, reduce the heat to low. Add 2 tablespoons of soy sauce, 1 tablespoon of mirin, and 0.5 teaspoon of salt. Stir gently and let it simmer for about 5 minutes to allow the flavors to meld.

Slice the Vegetables
While the broth is simmering, thinly slice the green onions and set aside. Peel and julienne the carrot into thin strips. If using dried shiitake mushrooms, soak them in hot water for about 20 minutes, then slice them. If using fresh, simply slice them.

Prepare Mitsuba
Rinse the mitsuba under cold water and chop it coarsely. Set aside for garnishing.
Assembling the Soup

Serve the Soup
Ladle the soup into serving bowls and top with sliced green onions and chopped mitsuba. Serve hot.
