    Prepare the Codfish

    Rinse the codfish fillets under cold water and pat them dry with paper towels. Cut the fillets into slices, about 1 inch thick.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In a separate bowl, whisk together the eggs, salt, and black pepper until well combined.

    Heat the Oil

    In a large frying pan, heat the vegetable oil over medium-high heat. Ensure the oil is hot but not smoking.

    Coat the Fish

    Take each slice of codfish, dip it first in the flour, ensuring it is fully coated. Then, dip the floured cod into the egg mixture, allowing any excess to drip off.

    Fry the Fish

    Carefully place the coated codfish slices into the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan; work in batches if necessary.

    Once cooked, remove the codfish from the pan and place it on a plate lined with paper towels to drain excess oil. Serve immediately, garnished with lemon wedges and chopped parsley if desired.
