Cooking Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture with a wooden spatula until evenly coated. Allow the rice to cool to room temperature.

Preparing Crab Sticks

    Cut the Crab Sticks

    If desired, cut each crab stick in half to create smaller pieces suitable for serving.

    Assemble the Sushi

    If using nori sheets, cut them into strips. Place a small amount of sushi rice on top of a crab stick piece. Optionally, wrap with a strip of nori.

    Serve

    Arrange the crab stick sushi on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side for dipping.
