Prepare the Mackerel
Start with fresh mackerel fillets. Rinse them under cold water and pat them dry with paper towels.

Slice the Mackerel
Using a sharp knife, slice the mackerel fillets into thin, even pieces, about 1 cm thick.

Plate the Sashimi
Arrange the sliced mackerel on a plate. You can fan them out or stack them neatly.

Serve with Condiments
Serve the sashimi with soy sauce, a small dollop of wasabi, and pickled ginger on the side.
Sushi

Cook the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook it according to package instructions, usually in a rice cooker or on the stovetop, using a ratio of 1:1.2 rice to water.

Season the Rice
Once the rice is cooked, transfer it to a bowl. Mix rice vinegar, sugar, and salt in a separate bowl until dissolved. Pour this mixture over the rice and gently fold it in with a spatula. Let the rice cool to room temperature.

Prepare the Mackerel
While the rice cools, rinse the mackerel fillets and slice them into thin strips, similar to the sashimi preparation.

Assemble the Sushi Roll
Place a nori sheet on a bamboo sushi mat. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving about 2 cm at the top edge. Lay the mackerel strips in the center of the rice.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep it tight. Roll until the nori edge meets the rice, wetting the edge to seal it.

Slice the Sushi Roll
Using a sharp, wet knife, slice the roll into bite-sized pieces, about 2-3 cm each.

Arrange the sushi pieces on a plate and serve with soy sauce, wasabi, and pickled ginger.
