Prepare the Beef
Using a sharp knife, finely chop the raw beef tenderloin into small pieces. Aim for a texture that is almost like a paste but still has some small chunks for a delightful bite.

Mix the Ingredients
In a mixing bowl, combine the finely chopped beef with sesame oil, soy sauce, salt, and black pepper. Mix thoroughly with a fork or your hands until all ingredients are well incorporated.

Add the Egg Yolk
Create a small well in the center of the beef mixture and add the egg yolk. Mix again gently until the yolk is fully incorporated into the beef mixture.
Garnishing and Serving

Prepare the Garnishes
Finely chop the chives and set them aside. Toast the sesame seeds in a dry skillet over medium heat for a few minutes until they are golden brown and fragrant.

Assemble the Dish
On a serving plate, place the beef mixture in the center. Sprinkle the chopped chives and toasted sesame seeds on top. Arrange the finely sliced Korean radish around the beef and place lettuce leaves on the side.
