Preparing the Calamari

Clean the Squid
Rinse the medium-sized squid under cold running water. Remove the head, tentacles, and insides. Cut the body into rings about 1 inch thick.

Prepare the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Make the Batter
Gradually add cold water to the dry mixture, stirring until you achieve a smooth batter consistency.
Frying the Calamari

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 180°C (350°F). Use a thermometer for accuracy.

Coat the Squid
Dip the squid rings into the batter, allowing excess to drip off.

Fry the Calamari
Carefully place the battered squid rings into the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain
Using a slotted spoon, remove the fried calamari from the oil and drain on paper towels.

Mix the Sauce
In a small bowl, combine mayonnaise, ketchup, lemon juice, and hot sauce. Mix thoroughly until combined.
