Method
Preparing the Sea Scallops

Select Fresh Scallops
Choose fresh, high-quality sea scallops from your seafood market. They should be firm to the touch and have a clean ocean scent.

Clean and Slice
Rinse the scallops under cold water. Pat them dry with a clean kitchen towel. Using a sharp knife, slice each scallop into thin rounds or leave whole for sashimi.
Preparing Sushi Rice (if making sushi)

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
Cook the rice according to the package instructions, usually in a rice cooker or on the stovetop, using a 1:1 ratio of rice to water.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix together rice vinegar, sugar, and salt until dissolved, then gently fold this mixture into the rice while it's still warm. Allow it to cool to room temperature.
Serving the Dish

Assemble Sashimi
Arrange the sliced scallops neatly on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.

If making sushi, take a small amount of sushi rice and mold it into an oval shape. Place a slice of scallop on top of each rice ball.

Garnish and Serve
Garnish with microgreens or a sprinkle of sesame seeds if desired. Serve immediately and enjoy!
