    Muddle

    Place the 1 tablespoon thinly sliced fresh ginger into the base of a cocktail shaker or mixing glass. Add the 0.5 oz simple syrup and gently muddle 8–10 times to release the ginger oils and aromatics. Aim to bruise the ginger, not pulverize it.

    Add juices and spirit

    Pour in 2 oz fresh grapefruit juice and 1 oz Giffard Elderflower NA Spirit into the shaker with the muddled ginger and syrup. Add 3 dashes of non‑alcoholic bitters.

    Shake with ice

    Add about 1 cup of ice to the shaker. Shake vigorously for 10–12 seconds until the shaker is well chilled (or stir if using a mixing glass with a strainer).

    Double strain

    Double strain the mixture (through a fine mesh strainer) into a chilled Collins or large wine glass filled halfway with fresh ice. Double straining will remove ginger fibers and pulp for a smooth finish.

    Top with sparkling

    Carefully top the strained cocktail with 4 oz chilled Misty Cliffs Sparkling NA Chardonnay. Pour slowly down the side of the glass to preserve effervescence and create a layered appearance.

    Garnish and finish

    Express the oils of a grapefruit twist over the drink and drop it in, or place a grapefruit wheel on the rim. Optionally add one small extra dash of non‑alcoholic bitters on top for visual contrast and aroma. Serve immediately.
