Preparation
1. Chill beer properly
Store the Jai Alai IPA in the refrigerator for at least 2–4 hours prior to serving. Ideal serving temperature for an American IPA is about 45–50°F (7–10°C). Do not over-chill (avoid freezer) — too cold masks hop aroma and flavor.
2. Select glass
Choose a tulip or shaker pint glass. A tulip highlights hop aromatics; a shaker pint is traditional and functional. Ensure the glass is clean and free of detergent residue to preserve head retention and aroma.
Pouring
3. Rinse (optional)
If the glass has been sitting at room temperature, briefly rinse with cold water to avoid shocking the beer and to help form a proper head. Drain excess water so the glass is wet but not pooling.
4. Open and pour
Open the Jai Alai can or bottle. Hold the glass at a 45-degree angle and begin pouring, aiming for the middle of the side of the glass. Pour about two-thirds of the beer with the glass tilted to minimize excessive foam.
5. Finish pour
As the glass nears two-thirds full, tilt it upright and pour the remaining beer down the center to create a 1/2 to 1-inch head. This head will release hop aromatics and preserve carbonation.
Garnish (optional)
6. If desired, express a citrus peel (orange or grapefruit) over the beer by holding the peel over the glass and giving it a quick twist to release oils, then optionally rub the peel on the glass rim and drop it into the beer. This is purely optional and not traditional for Jai Alai, but can complement the citrusy hop character.
Tasting & Serving
7. Serve immediately. Sip to evaluate aroma first — look for citrus, tropical fruit, and resinous notes from the hops. Take moderate-sized sips to appreciate the malt backbone, hop bitterness, and juicy hop flavors. Allow the beer to warm slightly in the glass (5–10 minutes) to reveal more aroma and flavor complexity.
8. Pair with foods such as spicy dishes, grilled meats, sharp cheeses, or burgers to complement the IPA's hop profile and moderate malt sweetness.
