Bring liquid to a boil
In a medium heavy-bottomed saucepan, bring 4 cups of water and 1 teaspoon kosher salt to a rolling boil over high heat.

Slowly add grits
Gradually whisk in 1 cup Marsh Hen Mills stone-ground grits into the boiling water to prevent lumps. Reduce heat immediately to low–medium so the mixture simmers gently.

Simmer and stir
Cover partially with a lid tilted to allow steam to escape. Simmer, stirring frequently with a wooden spoon, 25–35 minutes until grits are tender and creamy. Taste for doneness — they should be soft but still have a bit of texture. If grits thicken too much, stir in up to 1/2 cup hot water or cream to loosen.
Finishing (buttery, cheesy)

Temper with butter and cream
When the grits are tender, remove the pan from heat. Stir in 2 tablespoons unsalted butter and 1/4 cup heavy cream until fully incorporated and smooth.

Add cheese
Fold in 1 cup grated sharp white cheddar a handful at a time, stirring until the cheese is melted and the mixture is creamy. Taste and adjust salt as needed (cheese contributes salt).

Season and finish
Stir in 1/2 teaspoon freshly ground black pepper and, if using, 1 tablespoon finely chopped chives or scallions. Keep warm until ready to serve; if reheating, do so gently over low heat with a splash of cream or water to restore creaminess.
