Combine and dissolve
Combine 0.5 cup honey and 0.5 cup hot water in a heatproof container. Stir until fully combined and smooth. Let cool to room temperature. Store in a sealed jar in the refrigerator for up to 2 weeks.

Prepare glass
Chill an old-fashioned glass or coupe by filling it with ice and setting it aside while you build the cocktail.

Build and stir
In a mixing glass, combine 2 oz Cynar, 1 oz sweet vermouth, 0.5 oz honey syrup, 0.25 oz fresh lemon juice, 2 dashes orange bitters and 1 dash aromatic bitters (if using). Add several large ice cubes and stir gently for 20–30 seconds until the outside of the mixing glass is well chilled and the drink is slightly diluted.

Strain
Discard the ice from the chilled serving glass. Strain the stirred cocktail into the chilled glass over a single large ice cube or neat, per preference.

Garnish and serve
Express the oils of an orange peel over the drink by holding the peel skin-side down above the glass and giving it a quick twist, then rub the peel on the rim and drop it into the drink as garnish. Serve immediately as a slow, savory digestive.
