Cocktail

Method

Prepare Glass

  1. 1

    Chill glass

Place a martini or coupe glass in the freezer for at least 10 minutes to chill while you prepare the drink.

  2. 2

If using chocolate syrup drizzle: hold the chilled glass at a slight angle and drizzle the house chocolate sauce inside the rim, creating a decorative spiral or streaks. Return the glass upright and place in the freezer for 1–2 minutes to set slightly.

Mix Cocktail

  1. 3

Add the ice to a cocktail shaker (about 0.75 cups). Pour in the vodka (2 oz), Bailey's Irish Cream (1 oz), dark crème de cacao (0.75 oz), and the sfumato (0.25 oz).

  2. 4

Add 1 tablespoon house chocolate sauce to the shaker. This adds chocolate body and a sweet note; if the sauce is very thick, warm it slightly so it mixes more easily.

  3. 5

Fit the shaker lid and shake vigorously for 12–18 seconds, until the outside of the shaker is frosty and the liquids are well-emulsified and slightly foamy from the Bailey's.

  4. 6

Take the chilled glass from the freezer. Double strain the cocktail into the glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any thick chocolate bits for a smooth presentation.

Garnish & Serve

  1. 7

Lightly dust the surface with 1/4 teaspoon of cocoa powder using a fine sieve, aiming for even coverage.

  2. 8

Finish with chocolate shavings or curls (about 1 teaspoon) placed in the center of the drink for aroma and visual appeal.

  3. 9

Serve immediately. Sip slowly to enjoy the layered chocolate and smoky notes from the sfumato.
