Method
Punch Base
- 1
Combine spirits
In a large punch bowl (about 3–4 quart capacity), pour in the dark rum, brandy, optional Jamaica/Demerara rum, and the fortified wine. Stir gently to combine so the alcohols are evenly mixed.
Citrus & Juice
- 2
Add citrus and water
Juice fresh lemons and oranges until you have the required amounts. Strain the juices to remove pulp and seeds, then add the lemon and orange juice to the punch bowl. Add the cold water and stir to integrate. Tasting at this point helps balance acidity.
Sweeteners & Spice
- 3
Sweeten and spice
Add the simple syrup and the powdered/superfine sugar to the bowl and stir until fully dissolved. Sprinkle in the ground allspice and ground nutmeg, whisking briefly so the spices distribute evenly. Taste and adjust: add more simple syrup if too tart, or a splash more water if too strong.
Chill & Marry
- 4
Cover the punch bowl and refrigerate for at least 1 hour, ideally 2–3 hours, to let flavors marry and mellow. If short on time, allow at least 30 minutes in a very cold refrigerator. For an 18th-century feel, you can also let it sit with a large block of ice in the bowl to chill without diluting too quickly.
Garnish & Serve
- 5
- 6
To serve, ladle into cups or small glasses over additional ice if desired. Offer extra citrus slices and a small bowl of powdered sugar for guests who prefer additional sweetness.
