Make syrup
In a small saucepan combine 2 cups water and 1 cup granulated sugar. Heat over medium, stirring until sugar dissolves and liquid comes almost to a simmer.

Add 3 fresh rosemary sprigs, 1 tablespoon lemon zest, 1 tablespoon orange zest, 1 teaspoon dried gentian root (or substitute), and 1 teaspoon dried bitter orange peel. Reduce heat to low so the syrup barely simmers. Simmer gently for 6–8 minutes to extract bitter and aromatic flavors.

Remove from heat and let steep, covered, for 30 minutes to deepen the infusion and let bitterness mellow. Taste after 30 minutes and, if too bitter, remove gentian earlier next time or dilute syrup when mixing.

Strain the syrup through a fine-mesh sieve or cheesecloth into a clean jar, pressing gently on solids to extract liquid. Discard solids. Cool syrup to room temperature, then refrigerate until chilled. Yields roughly 1 cup (240 ml) syrup; use 45 ml per serving. Syrup will keep refrigerated for up to 2 weeks.
Assemble AMARO LUCANO (non-alcoholic)

Chill: Ensure your carbonated water, chilled black tea and non-alcoholic vermouth (if using) are well chilled before mixing. Fill a mixing glass or shaker with ice.

Measure and add 45 ml rosemary-citrus syrup to the mixing glass.

Add 100 ml chilled black tea (strongly brewed; use concentrated 1:4 leaf-to-water brew cooled) if you didn’t use vermouth as the primary aromatized element. If using non-alcoholic vermouth, add 30 ml non-alcoholic vermouth and 100 ml black tea as specified to preserve depth.

Add 10 ml fresh lemon juice and 2 tsp (or about 2 dashes) non-alcoholic aromatic bitters. Stir briskly for 10–15 seconds to chill and combine (do not over-dilute).

Open and gently add 300 ml chilled carbonated water (seltzer) to the mixture, stirring once gently to retain effervescence. If you prefer a slightly less fizzy drink, reduce seltzer to 200–250 ml.

Taste and adjust: if too bitter, add 5–10 ml simple syrup or more rosemary-citrus syrup. If too sweet, add a few drops more lemon juice or a splash more black tea to balance.

Pour the finished drink into a chilled rocks glass or small wine glass over fresh ice.

Serve immediately as a non-alcoholic digestive. Each serving is designed to be bitters-forward with herbal rosemary and citrus notes reminiscent of a traditional amaro.
