Method
Preparing the Chicken
- 1
Season the Chicken
Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and paprika.
- 2
Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken thighs and cook for about 5-7 minutes on each side until golden brown. Remove from skillet and set aside.
- 3
Sauté the Garlic
In the same skillet, reduce heat to medium, add minced garlic (minced) and sauté for about 1 minute until fragrant.
- 4
Add Broth and Simmer
Pour in chicken broth, scraping the bottom of the skillet to deglaze. Return chicken to the skillet, cover, and let it simmer for about 20 minutes until cooked through.
- 5
Finish with Parsley
Once cooked, stir in chopped fresh parsley for garnish before serving.
Making the Grits
- 6
Boil Water
In a medium saucepan, bring 4 cups of water to a boil. Add salt.
- 7
Add Grits
Gradually stir in the grits. Lower the heat to medium-low and cook, stirring frequently, until thickened (about 20-25 minutes).
- 8
Add Cream and Butter
Once the grits have thickened, stir in heavy cream and butter until well combined and creamy.
- 9
Incorporate Cheese
If desired, fold in shredded cheese until melted and fully incorporated.
