Turkey Cream Cheese & Cranberry Recipe

    Prepare bread

    Spread softened butter evenly on one side of each sourdough slice. Heat a skillet or griddle over medium heat until hot but not smoking.

    Toast sourdough

    Place bread slices butter-side-down on the skillet. Toast 1–2 minutes until golden brown and slightly crisp. Remove and place buttered sides down so toasted sides are outer.

    Assemble base with cream cheese

    On one slice of toasted sourdough, spread the 2 tablespoons of softened cream cheese evenly, leaving a small border at the edge to prevent slipping.

    Add cranberry

    Spoon 2 tablespoons whole-berry cranberry sauce evenly over the cream cheese. If sauce is very wet, blot slightly with a spoon to prevent sogginess.

    Layer turkey and greens

    Arrange the 4 oz sliced turkey in an even layer over the cranberry. Top turkey with 1 cup baby spinach leaves (or mixed greens). Add optional 2 slices thin red onion if using. Season with the 1 tsp freshly ground black pepper.

    Finish sandwich

    Top with the second slice of toasted sourdough, toasted side out. Press gently to compact. Cut sandwich in half on the diagonal and transfer to a plate alongside the coleslaw.

    Prepare vegetables

    Finely shred the green and red cabbage and grate the carrot. Place them in a medium mixing bowl and toss to combine into a uniform mix.

    Make dressing

    In a small bowl, whisk together 3 tbsp mayonnaise, 1 tbsp apple cider vinegar, 1 tsp granulated sugar, 1 tsp Dijon mustard, 1 tsp salt, 1/2 tsp freshly ground black pepper, and optional 1/4 tsp celery seed until smooth and slightly glossy.

    Combine and chill

    Pour the dressing over the shredded cabbage and carrot. Toss thoroughly to coat all vegetables. Taste and adjust seasoning (add more salt, pepper, or a splash of vinegar if desired). For best flavor, cover and chill at least 20 minutes before serving to allow flavors to meld.

    Plate

    Serve approximately 3/4 to 1 cup coleslaw per sandwich on the side. Stir again briefly before plating.
