The Club House Recipe
A triple-decker sandwich with turkey, bacon, lettuce, and tomato. Served with a side of Huber’s coleslaw.

Prepare spread
In a small bowl, mix 2 tablespoons mayonnaise with 1/8 tsp black pepper and 1/8 tsp salt. Spread a thin layer on one side of each toasted (or untoasted) bread slice.

Assemble first layer
Place the first slice mayonnaise-side-up on a cutting board. Layer half of the turkey (about 2 oz) evenly over the bread, then place one crisp bacon slice (break to fit) and one lettuce leaf on top.

Middle slice
Place the second slice of bread mayonnaise-side-down on the layer you just made. Spread mayonnaise-side-up on the exposed side of this middle slice as well. Top with the remaining turkey, the remaining bacon slices, and the tomato slices. Sprinkle the tomato slices with a pinch of salt (about 1/8 tsp) and a light grind of black pepper.

Top and finish
Place the third slice of bread mayonnaise-side-down on top to complete the triple-decker. Press down gently to compact layers. If desired, secure the sandwich with two toothpicks (one at each end).

Slice and serve
Using a sharp serrated knife, cut the sandwich diagonally into quarters or in half (push toothpicks in as you slice if used). Transfer to a plate and serve immediately with the coleslaw on the side.

Combine vegetables
In a large bowl combine 2 cups shredded green cabbage, 1/2 cup shredded red cabbage, and 1/2 cup grated carrot. Toss to mix evenly.

Make dressing
In a separate small bowl whisk together 1/4 cup mayonnaise, 1 tablespoon apple cider vinegar, 1 teaspoon sugar, 1/2 teaspoon Dijon mustard, 1/4 teaspoon celery seed, 1/4 teaspoon salt and 1/8 teaspoon black pepper until smooth and slightly glossy.

Dress the slaw
Pour the dressing over the shredded vegetables. Toss thoroughly to coat all pieces. Taste and adjust seasoning with additional salt or vinegar if desired (add increments of 1/4 tsp salt or 1/2 tsp vinegar).

Chill and serve
For best flavor, cover and refrigerate the coleslaw for at least 20 minutes to let flavors meld. Serve chilled alongside the assembled Club House sandwich.
