Dressing - Classic Vinaigrette (choice)

    Prepare greens

    Place 6 cups of organic mixed field greens in a large salad bowl. Gently fluff and inspect leaves, removing any stems or wilted pieces.

    Wash and dry vegetables

    Rinse the cucumber, cherry tomatoes and carrot under cold running water. Dry thoroughly using a salad spinner or clean kitchen towel to prevent sogginess.

    Slice cucumber

    Halve the 1/2 English cucumber lengthwise and thinly slice into 1/8- to 1/4-inch half-moons (about 3/4–1 cup sliced). Add to the bowl with the greens.

    Halve tomatoes

    Cut 1 cup of cherry tomatoes in half (or quarter if very large) and add to the bowl.

    Shred carrot

    Peel the large carrot, then either julienne or use a grater to shred it into thin ribbons (about 1/2 cup). Add to the bowl.

    Add herbs and season

    Sprinkle 2 tablespoons of finely chopped fresh herbs over the salad if using. Season with 1/4 teaspoon kosher salt and 1/8 teaspoon freshly ground black pepper; toss gently to distribute.

Dressing - Classic Vinaigrette (choice)

    Make vinaigrette

    In a small bowl or jar combine 3 tablespoons extra-virgin olive oil, 1 tablespoon red wine vinegar, 1/2 teaspoon Dijon mustard, 1/2 teaspoon honey or maple syrup (optional), 1/8 teaspoon salt and a pinch (1/16 teaspoon) black pepper. Whisk or shake vigorously until the dressing is emulsified.

    Dress salad

    Just before serving, drizzle the vinaigrette over the salad — start with about half the dressing (about 2 tablespoons) and toss gently with salad tongs. Taste and add more dressing if desired.

Alternate Dressing - Creamy Lemon Herb (choice)

    Make creamy dressing

    In a small bowl combine 3 tablespoons plain Greek yogurt, 1 tablespoon fresh lemon juice, 1 teaspoon extra-virgin olive oil, 1/2 teaspoon honey or maple syrup (optional), 1 teaspoon chopped fresh herbs, 1/8 teaspoon salt and a pinch (1/16 teaspoon) black pepper. Whisk until smooth and slightly runny; add 1–2 teaspoons water if needed to reach desired consistency.

    Dress salad

    Toss the salad with approximately 2 tablespoons of the creamy dressing, adding more to taste. Mix gently to coat leaves without crushing them.
