Preparation

    Prepare the Parsnip Puree

    In a pot, bring salted water to a boil. Add parsnips and cook until tender, about 15 minutes. Drain and return to the pot. Add heavy cream and butter, then puree until smooth. Season with salt to taste.

    Roast the Kabocha Squash and Beets

    Preheat oven to 400°F (200°C). Toss kabocha squash and beets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.

    Sauté the Mushrooms and Carrots

    In a skillet, melt butter over medium heat. Add oyster mushrooms and baby carrots, cooking until tender, about 8-10 minutes. Season with salt and pepper.

Grilling the Fish

    Grill the Black Grouper

    Preheat the grill to medium-high heat. Brush grouper fillets with olive oil and season with salt and pepper. Grill for 4-5 minutes on each side, or until cooked through and flakes easily with a fork.

Vinaigrette

    Make the Brown Butter Vinaigrette

    In a small saucepan, melt butter over medium heat until browned and fragrant. Remove from heat and whisk in apple cider vinegar, Dijon mustard, salt, and pepper to taste.

Plating

    Assemble the Dish

    On each plate, spread a layer of parsnip puree. Top with grilled black grouper, roasted kabocha squash, beets, sautéed mushrooms, and baby carrots. Drizzle with brown butter vinaigrette before serving.
