Method
Preparing the Mignonette Sauce
Mix the Ingredients
In a small bowl, combine the red wine vinegar, chopped shallots, and freshly cracked black pepper. Mix well and let it sit for at least 30 minutes to allow the flavors to meld.
Making the Oyster Crackers
Prepare the Dough
In a large bowl, mix the flour, baking powder, and salt. Add the softened butter and mix until crumbly. Gradually add water until a dough forms.
Roll and Cut
Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8 inch thick. Cut into small squares or circles with a cookie cutter.
Bake
Place the crackers on a baking sheet lined with parchment paper. Bake for 10-12 minutes or until golden brown. Remove from the oven and let cool.
Serving the Oysters
Prepare the Oysters
Carefully shuck the fresh Gulf oysters and place them on a serving platter over crushed ice.
Serve
Serve the oysters raw with the mignonette sauce and housemade oyster crackers on the side.
