Method

Prepare Noodles & Sauce

  1. 1

    Soften noodles if needed

If using refrigerated fresh rice noodles, gently separate them by hand. If they are somewhat stiff, briefly dip in warm (not boiling) water for 20–30 seconds to loosen. Drain and set aside on a plate, keeping them in large flat pieces rather than broken—this preserves texture.

  2. 2

Whisk together dark soy, light soy, oyster sauce, sweet soy (or kecap manis), fish sauce, sugar, and black pepper in a small bowl until sugar dissolves. Taste for balance: the sauce should be savory with a sweet finish. Adjust fish sauce or sugar as necessary.

Vegetables & Aromatics

  1. 3

Trim Chinese broccoli: separate leafy greens from thicker stems. Slice stems on a bias into 1/8–1/4 inch pieces so they cook quickly; leave leaves mostly whole or halved if large.

  2. 4

Thinly slice shallot, mince garlic, and slice chiles and green onions. Keep each prepped and within reach (mise en place) — stir-frying is fast.

Cook

  1. 5

    Heat wok

Place a wok or large heavy skillet over high heat until very hot (smoking point). Add neutral oil and swirl to coat.

  2. 6

Add minced garlic and sliced chiles; stir-fry 10–15 seconds until fragrant but not browned.

  3. 7

Add shallot slices and the sliced kai-lan stems. Stir-fry 30–45 seconds until stems begin to soften but still have bite.

  4. 8

Push vegetables and aromatics to one side of the wok. Add beaten eggs into the cleared space and let them set for 10–15 seconds, then scramble lightly until just cooked but still moist.

  5. 9

Add the drained rice noodles to the wok. Pour the prepared sauce evenly over the noodles. Using tongs or two spatulas, toss gently but briskly to combine, making sure the sauce coats the noodles and the eggs and vegetables are distributed. If noodles are clumped together, use a splash (1–2 tbs) of warm water to help loosen and create a little steam—do not add too much liquid.

  6. 10

When noodles are warmed through (about 1–2 minutes) and sauce is well absorbed, add the leafy parts of the Chinese broccoli and the green onion pieces. Stir-fry an additional 30–45 seconds until leaves are wilted but still bright green and everything is hot.

  7. 11

Taste and adjust seasoning: if it needs more saltiness, add up to 1 tsp light soy or 1/2 tsp fish sauce. If it needs more sweetness, add a small pinch of sugar. Finish with a crack of black pepper.

Serve & Garnish

  1. 12

Transfer Pad Kee Mao to warm plates. Garnish with basil leaves, a squeeze of lime, and crispy fried shallots if using. Serve immediately so noodles retain their texture.

  2. 13

Recommended accompaniments: extra lime wedges and sliced chiles on the side for those who want more heat and acidity.
