Method
Asparagus
- 1
Prepare asparagus
Rinse the asparagus under cold water and pat dry. Trim the woody ends by bending each spear near the base until it snaps naturally, or line up the bunch and cut off the bottom 1 to 1.5 inches with a knife. If spears are very thick, use a vegetable peeler to peel the lower third for more tender results.
- 2
Season
Place the trimmed asparagus in a large bowl or on a rimmed baking sheet. Drizzle with 2 tbs extra-virgin olive oil and toss to coat evenly. Sprinkle with 1 tsp kosher salt and 1 tsp freshly ground black pepper, tossing again so each spear is lightly and evenly seasoned.
- 3
Preheat grill
Preheat an outdoor grill to medium-high (about 400–450°F / 200–230°C). If using a grill pan indoors, heat it over medium-high heat until hot and lightly smoking.
- 4
Grill asparagus
Arrange asparagus spears perpendicular to the grill grates or on the grill pan so they don't fall through. Grill for 3–5 minutes on the first side without moving, until grill marks appear and the spears begin to soften. Turn with tongs and grill the other side for 2–4 minutes until tender-crisp and slightly charred. Total grilling time will depend on spear thickness.
- 5
Finish and serve
Remove asparagus from the grill and transfer to a serving platter. While hot, squeeze the juice of 1 lemon over the spears. If using, sprinkle 2 tbs grated Parmesan and/or 0.25 tsp crushed red pepper flakes to taste. Adjust seasoning with additional salt and pepper if needed. Serve immediately.
