Method

Steak Preparation

    Marinate the Steak

    In a bowl, combine olive oil, salt, black pepper, and garlic powder. Rub this mixture all over the hanger steak and let it marinate for at least 30 minutes.

    Grill the Steak

    Preheat the grill to medium-high heat. Grill the steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Let it rest for 5-10 minutes before slicing.

Roasted New Potatoes Preparation

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Cut the new potatoes in half and toss them with olive oil, salt, and rosemary.

    Roast the Potatoes

    Spread the potatoes on a baking sheet in a single layer. Roast for about 25-30 minutes until golden and crispy.

Calabacitas Preparation

    In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until softened.

    Add sliced zucchini and yellow squash to the skillet. Sauté until tender, about 5-7 minutes. Season with salt and pepper to taste.

Tomatillo-Avocado Puree Preparation

    In a blender, combine tomatillos, avocado, lime juice, and salt. Blend until smooth and creamy.

Chipotle Salsa Preparation

    Prepare the Salsa

    In a bowl, mix canned chipotle peppers, diced tomatoes, chopped onion, cilantro, lime juice, and salt. Adjust seasoning to taste.
