    Caramelize the Onions

    Slice the medium onion thinly. In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.

    Cook the Bacon

    In another skillet, cook the applewood bacon over medium heat until crispy. Remove and drain on paper towels. Once cooled, crumble into pieces.

    Make the Roasted Garlic Thyme Aioli

    Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb and drizzle with olive oil. Wrap it in foil and roast for 30 minutes. Once cooled, squeeze the garlic into a bowl, add mayonnaise, fresh thyme, salt, and pepper. Mix well.

    Assemble The Spicy Goat

    On a serving platter, spread the goat cheese evenly. Layer the caramelized onions, crumbled bacon, and grated Gruyère cheese on top. Drizzle with sweet & spicy pepper jelly. Serve with the roasted garlic thyme aioli on the side.
