Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and well combined. Let it rest for about 15 minutes.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Batter the Haddock
Dip each haddock fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered haddock fillets into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the brioche buns lightly. On each bun, layer lettuce, a fried haddock fillet, slices of tomato, and red onion. Drizzle with tartar sauce and top with the other half of the bun.

Serve the Mad Haddock sandwiches immediately with your favorite sides.
