Acai base

Method

Acai base

  1. 1

    Prepare frozen acai

If using a frozen acai packet, briefly run the outside under warm water for 5–10 seconds to loosen. Break the frozen puree into chunks and add to a high-speed blender.

  2. 2

Add the sliced ripe banana, frozen mixed berries, almond milk, and honey/agave to the blender with the acai chunks.

  3. 3

Pulse on high until the mixture is smooth but thick. Stop and scrape down the sides as needed. The texture should be thick enough to eat with a spoon — add additional milk 1 tablespoon at a time only if needed to get the blades moving.

  4. 4

Taste and adjust sweetness if desired by adding up to 1 more teaspoon honey or agave. Blend briefly to combine.

Assemble & toppings

  1. 5

Spoon the thick acai base into a small bowl (this is a 'baby' portion — about 1 cup). Smooth the top with the back of the spoon.

  2. 6

Evenly sprinkle the granola over one side of the bowl (about 1/3 cup) to provide crunch.

  3. 7

Arrange the 1/4 cup sliced banana and 1/4 cup fresh berries in small clusters on top of the acai.

  4. 8

Finish with shredded coconut, chia seeds, and an optional dusting of bee pollen for extra flavor and texture.

  5. 9

Serve immediately with a spoon. If not serving right away, keep chilled and consume within 30 minutes to maintain texture.
