Coconut Base
Preheat and prepare pan
Preheat oven to 350°F (175°C). Lightly grease a 9-inch tart pan or a shallow square baking pan and line the bottom with parchment if desired.
Combine dry ingredients: In a medium bowl, whisk together shredded coconut, flour, powdered sugar, ground almonds (if using), and salt until evenly distributed.
Add wet ingredients: Pour melted butter, add vanilla extract, and crack in the egg. Mix with a spatula until the mixture forms a cohesive, slightly sticky dough. If too dry, add 1 teaspoon more melted butter; if too wet, add 1 tablespoon flour.
Press and bake: Evenly press the coconut mixture into the prepared pan to a uniform thickness (about 1/2 inch). Smooth the top with the back of a spoon. Bake for 12–16 minutes, or until edges are golden and center is set.
Cool: Remove from oven and let cool completely in the pan on a wire rack (about 30 minutes) so it firms up before adding mousse.
Passion Fruit Mousse
Bloom gelatin: Sprinkle gelatin over 2 tablespoons cold water in a small bowl. Let sit 5 minutes until softened.
Warm passion fruit pulp: In a small saucepan over low heat, combine passion fruit pulp, granulated sugar, and lime juice. Warm gently until sugar dissolves and mixture is steaming but not boiling (about 3–4 minutes).
Dissolve gelatin: Remove pan from heat. Add the bloomed gelatin to the warm passion fruit mixture and stir until gelatin is fully dissolved. Let cool to room temperature but do not let it set—about 10 minutes.
Prepare cream base: In a medium bowl, beat the softened cream cheese or mascarpone with powdered sugar until smooth and lump-free.
Whip cream: In a separate chilled bowl, whip the heavy cream to soft peaks (when the cream holds a soft peak that slightly droops).
Combine: Fold the cooled passion fruit mixture into the cream cheese until combined. Then gently fold in about one-third of the whipped cream to loosen the mixture, followed by the remaining whipped cream until the mousse is homogeneous and light, taking care not to deflate the cream.
Assemble mousse on base: Spoon or pipe the passion fruit mousse over the cooled coconut base, spreading to an even layer about 1 to 1 1/2 inches thick.
Chill to set: Refrigerate the assembled tart for at least 3 hours, preferably 4–6 hours, until mousse is fully set and sliceable.
Finish & Garnish
Toast coconut: While mousse chills (or on a small baking sheet), toast the coconut flakes in a 325°F (160°C) oven for 3–6 minutes, stirring once, until golden. Watch carefully to avoid burning. Let cool.
Glaze/drizzle: If desired, spoon extra passion fruit pulp over the set mousse or serve it on the side as a fresh drizzle. This adds brightness and visible seeds.
Garnish and serve: Sprinkle toasted coconut flakes across the top, add mint leaves for color, and slice with a warm, dry knife (wipe blade between cuts) for clean slices. Keep refrigerated; serve within 2 days for best texture.
