Cooking the Whitefish

Prepare the Fish
Rinse the whitefish fillets under cold water and pat them dry with a paper towel. Season both sides with salt and black pepper.

Heat the Pan
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

Making the Lemon Capers Sauce

Add Lemon Juice and Capers
Squeeze the juice of both lemons into the skillet and add the capers. Stir to combine and bring to a simmer for about 2-3 minutes.

Finish the Sauce
Taste and adjust seasoning if necessary. You can add a pinch of salt or more lemon juice according to your preference.
Cooking the Sides

Cook the White Rice
In a saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, stir, and reduce the heat to low. Cover and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.

Prepare the Vegetable
While the rice is cooking, steam or sauté your choice of vegetable (e.g., asparagus or broccoli) until tender, about 5-7 minutes.

On each plate, serve a portion of white rice, top with a whitefish fillet, and drizzle the lemon capers sauce over the fish. Add the steamed or sautéed vegetable on the side.
