Turkey Preparation

Prepare the Turkey
Preheat your oven to 325°F (165°C). Rinse the turkey under cold water and pat it dry with paper towels. Rub the turkey inside and out with salt, black pepper, and olive oil.

Season the Turkey
Stuff the cavity of the turkey with garlic cloves, lemon halves, rosemary, and thyme.

Roast the Turkey
Place the turkey on a roasting rack in a roasting pan. Roast for about 13 minutes per pound, or until the internal temperature reaches 165°F (74°C). Baste the turkey with its juices every 30 minutes.

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes before carving.

Cook the Potatoes
Peel and chop the potatoes into chunks. Boil them in salted water for about 15-20 minutes, or until tender.

Combine Ingredients
In a large bowl, combine sautéed vegetables, bread cubes, chicken broth, sage, thyme, salt, and pepper. Mix well.

Simmer the Sauce
Reduce heat to low and simmer for about 10-15 minutes until the cranberries burst and the sauce thickens. Stir in the orange zest before serving.
Gravy Preparation

Make the Roux
In a saucepan, whisk together the flour and turkey drippings over medium heat until smooth.

Gradually add chicken broth, whisking continuously until the gravy thickens. Season with salt and black pepper to taste.
