Preparing the Pot Roast

    Sear the Chuck Roast

    Heat olive oil in a large skillet over medium-high heat. Season the chuck roast with salt and black pepper. Once the oil is hot, add the roast and sear it on all sides until browned, about 4-5 minutes per side.

    Add Ingredients to Slow Cooker

    Transfer the seared roast to the slow cooker. Add the chopped onion, minced garlic, chopped carrots, quartered potatoes, and bay leaves around the roast.

    Pour in the Broth

    Pour in the beef broth over the ingredients in the slow cooker. Ensure the vegetables are submerged in the liquid.

    Cook the Roast

    Cover the slow cooker and set it to low. Cook for 8-10 hours, or until the roast is fork-tender.

Making the Mashed Potatoes

    Boil the Potatoes

    In a large pot, add the peeled and cubed potatoes and cover them with water. Bring to a boil over high heat, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes.
