Method
Pasta Cooking
- 1
Boil the Pasta
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
- 2
Drain the Pasta
Once cooked, drain the pasta in a colander and set aside. Do not rinse, as the starch helps the cheese sauce adhere to the pasta.
Cheese Sauce Preparation
- 3
Make the Roux
In the same pot over medium heat, melt the unsalted butter. Once melted, add the all-purpose flour and whisk continuously for about 2 minutes until it forms a smooth paste (roux).
- 4
Add the Milk
Gradually whisk in the milk, ensuring no lumps form. Continue to cook while whisking for another 5-7 minutes until the mixture thickens and is smooth.
- 5
Combine and Bake
- 6
Combine Pasta and Cheese Sauce
Add the drained pasta to the cheese sauce and stir until the pasta is evenly coated.
- 7
Prepare for Baking
Preheat the oven to 350°F (175°C). If using, mix the breadcrumbs with paprika and grated Parmesan cheese in a small bowl. Set aside.
- 8
Transfer to Baking Dish
Pour the mac and cheese mixture into a greased 9x13 inch baking dish. If using, sprinkle the breadcrumb mixture evenly on top.
- 9
Bake
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
