    Cook the Eggs

    In a non-stick skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 3-4 minutes.

    Prepare the Red Salsa

    In a blender, combine the tomato, onion, lime juice, cilantro, jalapeño, salt, and black pepper. Blend until smooth and set aside.

    Prepare the Green Salsa

    In the same blender (no need to clean), combine the green bell pepper, garlic, lime juice, cilantro, salt, and black pepper. Blend until smooth and set aside.

    Prepare the Sides

    In a saucepan, heat the Spanish rice and refried beans until warmed through. Meanwhile, warm the flour or corn tortillas on a dry skillet over medium heat for about 30 seconds on each side.

Assembly

    Assemble the Dish

    On a plate, place a serving of Spanish rice and refried beans. Top the rice with the sunny side up eggs, then drizzle both the red and green salsas over the eggs. Serve with warm tortillas on the side.
