Method

Pork Tenderloin

  1. 1

    Prepare the Pork

Trim any excess fat from the pork tenderloin and cut it into 1-inch thick slices.

  2. 2

    Dredge in Flour

In a shallow dish, mix the all-purpose flour, cornstarch, garlic powder, onion powder, salt, and black pepper. In another bowl, whisk together the eggs and milk. Dip each pork slice first in the flour mixture, then into the egg mixture, and finally back into the flour mixture, ensuring an even coating.

  3. 3

    Fry the Pork

Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the coated pork slices and fry until golden brown and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside on paper towels to drain excess oil.

Country Gravy

  1. 4

    Cook the Sausage

In a saucepan over medium heat, add the ground sausage. Cook, breaking it apart with a wooden spoon until browned and cooked through.

  2. 5

    Make the Roux

Sprinkle the flour over the cooked sausage and stir well to combine. Cook for 1-2 minutes until the flour is slightly browned.

  3. 6

    Add Milk and Season

Gradually pour in the milk while continuously stirring to avoid lumps. Bring the mixture to a simmer, and cook until thickened. Season with salt and black pepper to taste.

Home Potatoes or Hash Browns

  1. 7

    Prepare the Potatoes

In a large pot, add diced potatoes and cover with water. Bring to a boil and cook until just tender, about 5-7 minutes. Drain and set aside.

  2. 8

    Sauté the Potatoes

In a skillet, heat vegetable oil over medium heat. Add the chopped onion and sauté until translucent. Add the parboiled potatoes, season with salt and black pepper, and cook until golden brown and crispy.

Toast

  1. 9

    Toast the Bread

While the pork and potatoes are cooking, toast the bread slices in a toaster or on a grill until golden brown.
