Preparing the Beef Brisket

Season and Sear
Preheat your oven to 300°F (150°C). Season the beef brisket with salt, black pepper, and dried thyme. In a large skillet over medium-high heat, sear the brisket on all sides until browned, about 4-5 minutes per side.

Making the Au Jus

Prepare Au Jus
In a saucepan, bring the reserved beef broth to a simmer. Stir in the soy sauce and adjust seasoning to taste. Keep warm until ready to serve.
Assembling the Sandwiches

Toast the Rolls
While the brisket rests, split and lightly toast the steak rolls until golden brown.

Add Cheese
Layer slices of the sliced brisket on the toasted rolls, top with slices of provolone cheese, and place under a broiler for 2-3 minutes until cheese is melted.

Serve
Spread horseradish on the top half of the rolls, close the sandwiches, and serve with a small bowl of warm Au Jus on the side for dipping.
