For the Buttermilk Biscuits

Make the Biscuit Dough
Preheat your oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

Shape and Bake the Biscuits
Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick round. Cut out biscuits using a biscuit cutter or glass. Place on a baking sheet and bake for 12-15 minutes or until golden brown.

Cook the Sausage Patties
Shape the sausage mixture into patties. In a skillet over medium heat, cook the patties for about 4-5 minutes on each side until browned and cooked through. Remove and keep warm.

Gradually whisk in the milk, stirring constantly until thickened. Season with black pepper and salt. Keep warm over low heat.
