Preparation

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until vegetables are soft.

    Add Potatoes

    Stir in the cubed potatoes and cook for an additional 3-4 minutes.

    Add Broth

    Pour in the vegetable or chicken broth, bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.

Cooking

    Add Proteins

    Once the potatoes are tender, add the canned beans, frozen corn, and cooked chicken or shrimp if using. Stir well.

    Seasoning

    Add cumin, chili powder, oregano, salt, and pepper. Mix thoroughly and let it simmer for an additional 10 minutes.

    For Chowder Version

    If you are making chowder, stir in the heavy cream and milk at this point. Allow it to simmer for another 5 minutes.

Finishing Touches

    Remove from heat and stir in chopped fresh parsley. Adjust seasoning to taste.
