For the Fries

Prepare the Fries
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

Fry the Potatoes
Carefully add the frozen French fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt to taste.

Cook the Beef
In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.

Add Vegetables and Spices
Once the beef is browned, add the diced onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes. Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, and black pepper.

Simmer the Chili
Reduce heat to low and let the chili simmer for about 20 minutes, stirring occasionally.

On a serving platter, arrange a generous layer of crispy fries. Top with a ladle of hot chili.

Sprinkle shredded cheddar cheese over the chili followed by diced onions.
