Chili Preparation

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent (about 3-5 minutes).

    Brown the Beef

    Add the ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes).

    Add the Spices

    Stir in the chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.

    Combine the Ingredients

    Add the kidney beans and diced tomatoes (with their juices) to the pot. Stir well to combine all ingredients.

    Simmer the Chili

    Bring the mixture to a simmer. Reduce heat to low, cover, and let simmer for at least 20 minutes, stirring occasionally.

    Add Cheese

    Once the chili is done simmering, remove it from heat and sprinkle the cheddar cheese evenly over the top. Cover the pot for a few minutes to allow the cheese to melt.
