Preparation of Filling

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat, add the diced potatoes, and season with salt and pepper. Cook until they are tender and golden brown, about 10-12 minutes.

    Sauté Vegetables

    While the potatoes are cooking, chop the onion and bell pepper. Once the potatoes are nearly done, add the chopped onion and bell pepper to the skillet. Sauté for an additional 5 minutes until the vegetables are soft.

    Scramble the Eggs

    In a bowl, whisk the eggs until well combined. Pour the eggs into the skillet with the potato and vegetable mixture. Stir gently until the eggs are fully cooked and scrambled, about 3-5 minutes. Remove from heat.

Assembling the Burrito

    Warm the Tortillas

    In a dry skillet or microwave, warm the flour tortillas until they are pliable, about 30 seconds to 1 minute.

    Fill the Tortillas

    Place half of the egg and filling mixture onto each tortilla. Roll the tortillas tightly around the filling to form burritos.

    Top with Chili and Cheese

    Place the wrapped burritos on a plate. Pour the signature chili over the top and sprinkle with cheddar cheese.

    Add Sour Cream

    Dollop sour cream on top of the burritos and serve immediately.
