Prepare the Base

Cook the Salsa Verde
In a medium saucepan over medium heat, warm the green salsa. Allow it to simmer gently for about 5 minutes, stirring occasionally.

Toss the Tortilla Chips
In a large mixing bowl, combine the tortilla chips with the warmed salsa verde. Toss gently until all chips are coated.
Prepare the Toppings

Prepare the Eggs
In a non-stick skillet over medium heat, crack the eggs and cook them to your preferred doneness (sunny-side up, over-easy, etc.). This should take about 3-4 minutes.

Heat the Refried Beans
In a small saucepan, heat the refried beans over low heat until warmed through, about 5 minutes, stirring occasionally.

Assemble the Chilaquiles

Layer the Chilaquiles
On a large serving plate, spread the coated tortilla chips evenly.

Add Toppings
Top the tortilla chips with the crumbled queso fresco, diced onions, and a generous dollop of sour cream.

Place the cooked eggs on top, add the warmed refried beans on the side, and finish with your choice of beef brisket or pork carnitas.
